Ingredients:
1 3/4 cups of rolled oats
1 cup almond flour
1/3 cup, tightly packed coconut sugar
1/2 tsp cinnamon
14 tsp sea salt
½ cup sliced almonds
¾ cup coconut oil, solid
3 apples, halved
1 cup craisins
½ cup honey
Instructions:
- Preheat oven to 375°.
- Scoop out center of apples until it's enough to fill and place in a baking dish.
- In a medium mixing bowl, combine oats, almond flour, coconut sugar, cinnamon, salt.
- In a separate bowl, whisk together coconut oil and honey.
- Combine both bowls of ingredients and mix well. Add in chopped dates and walnuts.
- Fill apples with filling and bake for 30 mins.
- Let apples cool for 5 minutes. When plating, spoon some of the liquid from the bottom of the baking dish over the apples. Enjoy!
