Stuffed Baked Apples

1 3/4 cups of rolled oats

1 cup almond flour

1/3 cup, tightly packed coconut sugar

1/2 tsp cinnamon

14 tsp sea salt

½ cup sliced almonds

¾ cup coconut oil, solid

3 apples, halved

1 cup craisins

½ cup honey


  1. Preheat oven to 375°.
  2. Scoop out center of apples until it's enough to fill and place in a baking dish.
  3. In a medium mixing bowl, combine oats, almond flour, coconut sugar, cinnamon, salt.
  4. In a separate bowl, whisk together coconut oil and honey.
  5. Combine both bowls of ingredients and mix well. Add in chopped dates and walnuts.
  6. Fill apples with filling and bake for 30 mins.
  7. Let apples cool for 5 minutes. When plating, spoon some of the liquid from the bottom of the baking dish over the apples. Enjoy!
