Spiced Protein Cookies
2 Scoops Kore Whey Vanilla Protein
½ cup pumpkin puree
1 ¾ cups almond flour
3 tbsp all-purpose flour
½ tsp baking powder
¼ cup peanut butter
1/3 cup coconut sugar
1 1/ tbsp pumpkin spice
2 tbsp coconut oil, melted
¼ cup coconut sugar
1 tbsp pumpkin spice
Preheat the oven to 30F. Line a large baking sheet with parchment paper.
Beat coconut oil and coconut sugar together for 15 seconds. Add in the eggs, beat for 10 seconds.
Add in the remaining cookie dough ingredients and mix with your hands.
Put the dough in the freezer for 25 minutes.
Mix the spice mixture ingredients together.
Remove the dough from the freezer. Scoop and roll 1 tbsp at a time into balls.
Roll the balls into the spice mixture. Press each one into the baking sheet to make discs.
Bake for 8-10 minutes. Enjoy!
